Ingredients:
1 can black beans(398ml) drained and rinsed
1 1/2 cups corn, cooked and cooled
1 cup grape tomatoes, quartered
1 cup diced red pepper
1 cup diced mango
1/2 cup green onion, chopped
2 tbls minced fresh cilantro
1 avacado, diced
Dressing:
3 tbls lime juice
2 tbls olive oil
1/4 teas salt & pepper
1/4 teas cumin
1/2 teas chili powder
1 tbls honey
Cooking Instructions:
Make dressing and allow flavours to blend. Toss salad and add avacado just before serving as it turns brown quickly.
Serving Suggestions:
May be served with lettuce or spinach but not necessary.
