| Ingredients: |
1 14oz can pinto beans,organic 1 onion, chopped 3 tbls olive oil 1 14 oz can black beans |
1/2 teas cumin 1/2 cup grated cheddar cheese 1 teas corriander salt and pepper |
| Cooking
Instructions: |
Put pinto beans in food processor with juices from can and process to a puree. Stir in black beans.
Heat oil in fry pan and cook onions until soft. Sprinkle with cumin, corriander, pepper and salt to taste. Ladle in the beans by the cup full and reduce down to a thick mixture. Continue adding beans and reducing. You should end up with a thick, chunky puree.
Sprinkle cheese over the top and cover or place under broiler to melt cheese.
